Roasted Cauliflower poppers




This recipe was so yummy!! It totally satisfies my need for fries or something fried. I have never thought of roasting cauliflower, but it is just too simple and delicious, even Brent liked it!! And he hates cauliflower! I got the recipe here. Hope you enjoy as much as we did!!

Roasted Cauliflower Poppers

What you will need:

* 2 heads of cauliflower
* 1/4 cup of olive oil
* 1 1/2 teaspoon of salt
* 1 teaspoon of pepper

Directions:

1. Preheat oven to 400 degrees
2. Wash and clean the cauliflower. Cut off and discard the stem. Cut the cauliflower up into small pieces.
3. In a large bowl, combine the olive oil, salt and pepper. Add the cauliflower pieces and thoroughly coat each piece.
4. Place cauliflower pieces onto a baking sheet lined with parchment paper. Bake for one hour and turn 3 times during cooking until each piece has a nice brown coloring. The browner they are the better.
5. Remove from oven and enjoy!

Ground beef, panko bread crumbs, and eggs make for delicious meatballs in this warm soup.

Ingredients

  • 1 lb. ground beef (80/20)
  • 2 ea. eggs
  • 1/3 cup panko bread crumbs
  • 3 Tbsp. parmesan cheese, grated
  • 3 quarts chicken broth
  • 3 cups fresh baby spinach
  • 1 cup carrots, diced
  • 1 cup yellow onion, diced
  • 1 cup celery, diced
  • 2 cups orzo pasta
  • ½ cup (to taste) extra virgin olive oil
  • salt and pepper to taste
  • Cooking Directions

    Saute carrots, onion and celery in oil until soft and starting to brown.

    Add Chicken stock. Let the mixture reduce on high heat.

    While boiling, mix beef, eggs, breadcrumbs and parmesan in a separate bowl to make meatballs. Form into ½ inch balls, and set on a baking sheet.

    Cook meatballs on the baking sheet in 375F degree oven for 12-15 minutes.

    Add pasta to soup to cook.

    When meatballs are cooked, add them to the soup.

    Stir in the spinach to the soup.

    Boil 5 minutes and season with salt and pepper.

    I got this recipe off yahoo a few days ago it just looked so good, and tried it last night--everyone loved it! Even the kids. It was something a little different than the regular soup, and warmed us up. For all the vegetarians out there, you will have to figure out what to substitute the meatballs for? I used turkey meat, instead of hamburger, and it was very tasty.
