Lentil soup



Good thing someone else had a delicious looking picture of what I made tonight! I think that Brent asks me to make this dish once a week so he can enjoy it for lunch all week long. Its a keeper! This recipe does call for bacon, but we substitute liquid smoke. I know, not even close by comparison, but it does give it a smokey flavor that we love! Enjoy!

Lentil Soup

Serves 8

2 Tbsp olive oil
1 small onion diced
2 peeled carrots diced
2 tbsp flour
7 c beef broth (you can add 1 more cup for thinner consistency)
1 tsp hickory flavored Liquid Smoke or 3 slices cooked bacon crumbled
1/2 tsp garlic powder
1/2 tsp ground pepper
2 c lentils

Directions: Heat olive oil in large pot, add onion and carrot cook for 5-7 minutes. Coat vegetables in flour, cook for 3-4 minutes. Add beef broth and liquid smoke/bacon, garlic powder, and pepper. Heat to boil then add lentils. Keep at simmer for 20-25 minutes until most broth is absorbed. Serve with rice.
